I try really hard to keep the mundane dinner ideas at bay. You better scat with your boring tater tots and hamburger helper! I do my best to serve full flavored food around here, so, here's a great simple recipe for you, for your dinner ideas book!
Dinner Serving Size (2) Adults
Prep & Serve in approx. 20 minutes
- Mixed Greens (cover 2 plates full)
- Sunflower Seeds (1 cup)
- Bacon (4 slices pre-cooked to save time, or use bacon bits)
- Chicken (2 breasts)
- Tomato (1)
- Corn (I boiled 2 shelled cobs and boiled them, but you can use frozen or canned as well)
- Mayonnaise (I used a couple heaping spoon scoops)
- Avocado (1 sliced or diced)
- Your Favorite Salad Dressing (not needed if you toss the salad with everything or choice)
- Chili Powder (1 tbsp or to taste)
- Salt & Pepper (to taste)
- Butter (a few tablespoons to cook the chicken in)
- Montreal Steak Spice (garlic, salt, some other proprietary goodness)
Start the corn, chicken, and bacon at the same time. You got this, you can multitask! Since I used corn on the cob, I boiled 2 ears to get that started first. Next, DICE or CUT fresh chicken breasts into chunks, and sautée them in some butter on the stove in a frying pan. In the meantime, also start your bacon. Set the oven to 400 Degrees Fahrenheit, and line a walled (has a lip around the edge to keep in the grease) cookie sheet with tin foil. The foil will prevent your bacon from sticking to the cookie sheet, and will cook your bacon more evenly. Once your bacon looks like it's halfway done, take the sheet out and drain the grease into a separate container. Once drained, pop the bacon back into the oven. Keep an eye on it, it will cook rapidly once drained. Remove when bacon has reached your desired doneness.
Your chicken should be done by now, so I simply season with Montreal Steak Spice by McCormick, but your favorite seasonings will do. By seasoning just before completion or after, you ensure full flavor.
DICE or SLICE your avocado and set aside for later. DICE your tomato, and PLACE it in a mixing bowl, followed by your mayo, salt & pepper, and chili powder. Once your corn is ready, scrape off the cob or however you made it, and combine it into your mixing bowl with your tomatoes and mayo mixture. Stir it all up!
Take out your bacon and break it up into bits, sized to your liking. Set aside.
Lay your salad leaves on a plate. Sprinkle your sunflower seeds as you like them across the leaves. Add and spread your mixing bowl contents onto your salad. Next, add your chicken then dressing of choice, followed by your avocado slices and bacon on top. Voila!
